RIBEYE WITH BELL PEPPER SALSA AND CHIVES
Ingredients:

Olive oil for drizzling the meat

Sauce:
½ red bell pepper
½ green bell pepper
2 tablespoons chopped chives
100ml olive oil
1 tablespoon vinegar
Salt and Pepper

½ cabbage
1 purple onion
1 carrot
1 apple
1 Greek yogurt
3 tablespoons mayonnaise
1 teaspoon honey
1 teaspoon mustard

Preparation:
- Put a frying pan on the heat with the olive oil and the crushed garlic. When the oil is very hot, brown the meat on both sides, season with salt and pepper. Let the steak rest for about 1 minute.
- Melt the butter. Put the egg yolks with the juice of half a lemon in a bowl and strain with a few sticks. Bring the bowl to a simmer and emulsify with the whisk until the eggs are cooked. When the eggs get a creamy texture, add the melted butter little by little and continue to emulsify with the whisk until everything is well combined. Season with salt and cayenne pepper.
- Cut the sweet potato into thin slices and fry, until golden brown. Season with salt and pepper.
