SOULS

Sauce Chimichurri

Ingredients: ½ bunch chopped parsley – 2 tablespoons chopped fresh oregano – 4 cloves crushed garlic – ½ cup chopped onion – chopped chili pepper (qb) -2 tablespoons red wine vinegar – 1 tablespoon lemon juice – ½ cup olive oil – salt (qb) – Black pepper (qb).

Preparation: Mix all the ingredients well in a bowl.

Avocado and Coriander Sauce

Ingredients: Half a cup of avocado cut into cubes – 1 small clove of garlic – 3 tablespoons of olive oil – Juice of half a lemon – 2 tablespoons of water – 2 sprigs of coriander – Salt (qb)

Preparation: Put the avocado, lemon juice, olive oil, and coriander leaves in a blender. Season with 1 pinch of salt and beat well until a creamy sauce is obtained. Add the water little by little, beating until it reaches the desired consistency and adjust the salt.

ACCOMPANIMENTS

Couscous Salad

Ingredients: 250g of couscous (fine grain) – 3 tomatoes – 1 cucumber – 1 onion – peppers (various colors) – 1 can of corn – 2 carrots (grated) – 5 tablespoons of vinegar – 1 sprig of mint – olive oil to taste – salt to taste – pepper to taste

Preparation:Heat a pan with a little olive oil. Add the chopped onion and peppers of various colors. Add a pinch of curry and the cumin. Stir and let it brown for 10 minutes. Put boiling water in the pot and add the couscous. Stir everything together and let it cook for 3 minutes. Pour into a large bowl and place in the cold. After cooling season with pepper and add the grated carrot, corn, chopped cucumber and diced tomato. Wrap and garnish with chopped mint.

Vegetable Kebabs

Ingredients: 2 zucchinis – 1 green bell pepper – 1 red/ orange bell pepper – cherry tomato – 4 tablespoons thyme or oregano – salt (qb) – 5 tablespoons olive oil (qb) – pepper (qb) – 8 kebab sticks.

Preparation: Pour the olive oil into a deep bowl, season with salt and pepper, and sprinkle with the oregano or thyme. Mix together and let stand for 15 minutes. On each kebab, alternately add cubes of zucchini, bell pepper, and cherry tomato.
