SOULS

Fine Herb Butter Sauce

Ingredients: 1/2 onion, diced – 4 garlic cloves – 200 g butter – fresh basil leaves – white pepper (qb) – salt (qb) – 250 ml dry white wine – juice of 1 lemon – fine herbs to taste (like parsley, thyme and rosemary) – water (if necessary).

Preparation: Saute the onion and garlic in butter until golden brown. Add the basil leaves, black pepper, salt, and white wine. When it starts to boil, add the lemon and the fine herbs. Let it boil for about 10 minutes.

Port Wine Sauce

Ingredients: 1 cup port wine – 1 cup balsamic or cherry vinegar – 2 tablespoons unsalted butter

Preparation: Place the wine in a tall pot and heat until reduced to half its original volume. Add the balsamic vinegar and let it reduce to a syrup-like consistency. Remove the pan from the heat, add the butter, and make circular motions with the pan until it has melted completely.

ACCOMPANIMENTS

Roasted Pumpkin Puree

Ingredients: 1 butternut squash (or hokaido) – 1 tablespoon butter – nutmeg (qb) – salt (qb) – pepper (qb)

Preparation: Preheat the oven to 200º. Wash the whole pumpkin very well (with the peel). Cut in half and remove the seeds. Cut into cubes and place on an oven tray. Roast for 30 to 40 minutes or until the squash is tender. Place in a blender at maximum speed until a creamy, lump-free puree is obtained. Season with butter (melted), nutmeg, salt and pepper to taste and mix well.

Grilled Asparagus

Ingredients: 2 bunches of green asparagus – 2 tablespoons of olive oil – salt (qb) – pepper (qb)

Preparation: Gently grill the asparagus in olive oil until tender and lightly caramelized. Season with salt and pepper to taste.
