SOULS
Chiptotle Sauce
Ingredients: 1 cup mayonnaise – 1 pinch cumin (qb) – 1 pinch thyme (qb) – 1 teaspoon sweet paprika – 2 teaspoons sugar – ½ teaspoon salt – 1 crushed garlic clove – ½ teaspoon white wine vinegar (or lemon juice) – ½ teaspoon Chipotle pepper sauce – 1 teaspoon water.
Preparation: Put all the ingredients in a bowl and mix very well. Add the water and mix again. Cover with plastic wrap and refrigerate for 30 minutes.
Mustard and Honey Sauce
Ingredients: 3 tablespoons of olive oil – 2 tablespoons of Dijon mustard – 1 tablespoon of honey – 1 pinch of salt (to taste) – 1 pinch of black pepper.
Preparation: Mix all the ingredients well in a bowl with a wire rod.


ACCOMPANIMENTS
Sweet Potato Chips
Ingredients: 4 medium sweet potatoes – ground black pepper – garlic powder – dried thyme – salt (qb).
Preparation: Wash the potatoes very well and dry them with a cloth (you can peel them). Cut thin rounds about 2mm-3mm. Arrange all the sweet potato slices on a baking tray lined with baking paper. Season the potatoes to taste with the garlic and pepper. Bake at 150º for about 20min. Turn the potatoes over, season again, and leave for another 15-20 minutes. They are ready when crispy.
Rainbow Salad
Ingredients: Lettuce leaves – arugula – watercress – cherry or other quality tomatoes – grated carrots – grated beets – pineapple cut into pieces – 100grs cooked quinoa – 100grs cooked chickpeas – pine nuts to taste.
Preparation: Arrange all the ingredients in a round or rectangular dish in a harmonious way. Season to taste with chopped coriander, lemon juice, and balsamic vinegar.
