THE SAUCE
Chipotle sauce
Ingredients: 1 cup mayonnaise – 1 pinch cumin (qb) – 1 pinch thyme (qb) – 1 teaspoon sweet paprika – 2 teaspoons sugar – ½ teaspoon salt – 1 crushed garlic clove – ½ teaspoon white wine vinegar (or lemon juice) – ½ teaspoon chipotle pepper sauce – 1 teaspoon water.
Preparation: Place all the ingredients in a bowl and mix well. Add the water and mix again. Cover with plastic wrap and refrigerate for 30 minutes.
GARNISH
Rustic roast potatoes (wedge)
Ingredients: 6 cloves of garlic – 8 medium roast potatoes (raw and unpeeled) – 2 tablespoons of olive oil – 2 tablespoons of rosemary – 1 tablespoon of salt – 1 tablespoon of smoked paprika (or other spices to taste such as oregano or paprika).
Preparation: Cut the potatoes in half (lengthways), and cut each half into 3 (to make a wedge shape). Once lightly cooked, add the spices and wrap well. Add the olive oil. Let it sit for a few minutes to absorb the flavor well, and then put it in the oven. In order for the potatoes to bake and get crispy, do not overlap them on the tray and flip them over.
