SOULS
THYME BUTTER
Ingredients: 100g softened butter – 1 tablespoon fresh thyme – Lemon zest – Fleur de sel (qb) – Freshly ground white pepper (qb)
Preparation: Boil the thyme for 15 seconds. Blend the butter at room temperature with the thyme and lemon zest in a blender. Season to taste with salt and pepper. Place in the fridge for about 1 hour.


ACCOMPANIMENTS
SWEET POTATO CHIPS
Ingredients: 4 medium sweet potatoes – Ground black pepper – Garlic powder – Dried thyme – Salt (qb)
Preparation: Wash the potatoes very well and dry them with a cloth (you can peel them). Cut into thin slices. Arrange all the sweet potato slices on a baking tray lined with baking paper. Season the potatoes to taste with garlic and pepper. Bake at 150ºC for about 20 minutes. Turn the potatoes over, season again and leave for another 15-20 minutes. They are ready when crispy.
*Add a lettuce salad with slices of green apple and walnuts, seasoned to taste.
Rainbow Salad
Ingredients: Alfalfa leaves – rocket – watercress – cherry or other quality tomatoes – grated carrot – grated beet – pineapple cut into pieces – 100grs cooked quinoa – 100grs cooked chickpeas – pine nuts to taste.
Preparation: Arrange all the ingredients in a round or rectangular dish in a harmonious way. Season to taste with chopped coriander, lemon juice, and balsamic vinegar.
