SOULS

Barbecue Sauce

Ingredients: 1 cup brown sugar – 1 cup tomato sauce – 1/2 cup Worcestershire sauce – 2 cloves minced garlic – 2 tablespoons minced onion – 2 tablespoons mustard – 1 tablespoon olive oil – salt (qb) – pepper (qb).

Preparation: Saute the onion in olive oil. Add all the other ingredients and simmer for 15 minutes. Remove from the heat and season to taste with salt and pepper.

Garlic Sauce

Ingredients: Juice of 1 large lemon – 200 ml chilled milk – 2 to 3 cloves of garlic – 300 ml olive oil – salt (qb)

Preparation: Put the milk, lemon, garlic, and salt in a blender and blend until the garlic is thoroughly crushed. Reduce to minimum speed and with the lid compartment open pour in the olive oil. Gradually the sauce will become thicker, when it reaches the texture of mayonnaise it is ready.

ACCOMPANIMENTS

Rustic Baked Potatoes (wedge)

Ingredients: 6 garlic cloves – 8 medium roast potatoes (raw and peeled) – 2 tablespoons olive oil – 2 tablespoons rosemary – 1 tablespoon salt – 1 tablespoon smoked paprika (or other spices to taste like oregano or sweet paprika).

Preparation:

Cut the potatoes in half (lengthwise), and each half cut in 3 (to give the wedge shape). Once lightly cooked, add the spices and wrap well. Add the olive oil. Let it sit for a few minutes to absorb the flavor well, and then put it in the oven. In order for the potatoes to bake and get crispy, do not overlap them on the tray and flip them over.

BBQ Salad

Ingredients: Tomato, cucumber, peppers, whole mushrooms, lettuce leaves and asparagus

Preparation: Cut the tomatoes into quarters, the cucumber into slices, the bell pepper into thin slices, and the mushrooms into 4 pieces. Season with salt and pepper. Drizzle with olive oil and balsamic vinegar. Leave this preparation to marinate for 1 hour. In the bottom of a salad bowl, arrange a layer of lettuce leaves. Place the mixture on top and garnish with pieces of asparagus.
