THE SAUCE
Madeira sauce
Ingredients: 2 tablespoons butter – 80ml madeira wine – 40g wheat flour – 560ml beef stock – 1 teaspoon mustard – salt
Preparation: Melt the butter, add the flour and stir well until golden brown. Gradually add the madeira wine, beef stock, salt, mustard and mushrooms. Keep stirring until it thickens.
3 Pepper Sauce
Ingredients: 2.5 dl of cream – 1 tablespoon of margarine – 1 tablespoon of olive oil – 1 teaspoon of three peppers – parsley – salt
Preparation: Put the cream, peppercorns and salt in a frying pan, mix well and cook until it thickens. Serve sprinkled with chopped parsley.
Keep stirring until it thickens.
GARNISH
Go for a salad and the typical crispy fries
Ingredients: : basil leaves – 2 garlic cloves – salt – 1 teaspoon balsamic vinegar – 150 ml olive oil – 6 cherry tomatoes – 4 beef heart tomatoes – 2 mozzarella cheeses – fresh basil (qb) – pepper
Preparation: Prepare the vinaigrette by placing the fresh basil in a food processor along with the garlic, salt and balsamic vinegar and blend well. Add half the olive oil and blend again. Add the rest of the olive oil and blend one last time. Reserve the vinaigrette. Then cut the cherry tomatoes into halves and the beef hearts into slices. Slice the mozzarella cheese and arrange on a platter. Finally, drizzle with the vinaigrette, garnish with basil and season with pepper.
